Stay Crabby

Try making Yvette's Crabmeat Crepes!

One pancake mix- use 2 oz of water and 1 oz of egg white. It will make 2 crepes.

Pour half of the batter on a sprayed griddle and spread thinly with the back of a metal spoon.

Sauté green onions and bell peppers in a tablespoon of olive oil.

Add 8 oz of crabmeat and continue sautéing for about 5 minutes.

Bring one oz of skim milk to a boil and add one teaspoon of chicken soup powder- whisk together and add 1/8 teaspoon of creole seasoning.

Pour a little into the crabmeat mixture -place crabmeat into crepe and pour remaining sauce on top.

Food For Thought

A fast food Caesar side-salad has about 280 calories and 19 grams of fat. That's roughly the same as a medium slice of plain cheesecake with about 250 calories and 18 grams of fat. When ordering salads, ask for the dressing on the side. Drizzle on just enough to taste. Go light on toppings that add extra fat and calories such as croutons, fried noodles and crispy tortilla strips. Look for salads made with dark leafy greens such as spinach, romaine lettuce, or kale and lots of colorful veggies and fruit such as carrots, sweet peppers, or berries.
